Ingredients
  

  • quarts unsalted chicken broth
  • 2 large Asian pears about 10 ounces total, cored and roughly cut in 1-inch pieces
  • 8 ounces fresh mushrooms such as beech, oyster and shiitake, trimmed and sliced ⅛-inch thick if large
  • ½ cup Shaoxing rice wine
  • 1 tablespoon thinly sliced peeled fresh ginger
  • 1 tablespoon goji berries
  • ¾ teaspoon salt
  • ½ teaspoon ground white pepper

Instructions
 

  • Bring 1½ quarts chicken broth to a boil in a 3-quart stockpot. Add pear, mushrooms, ½ cup Shaoxing, 1 tablespoon each ginger and goji berries, ¾ teaspoon salt and ½ teaspoon white pepper; bring to a boil. Reduce heat to maintain a simmer; cook, covered, until the pear is tender but not mushy, about 20 minutes.
